You need oil, flour, boneless skinless chicken thighs (your choice of meat), 2 packs brown gravy mix, 1 cup chicken broth, pack of seasoning blend (chopped onions, bell peppers, etc.), salt, pepper, garlic powder and Tony Chacheres's Creole seasoning.

You start by making a rue.
They normally call for 1/3 cup oil and 1/3 cup flour. I just cover the bottom of my pot with oil and heat it up. Add a little salt. When oil is hot, start adding flour and stir together. You want a thick paste to start with, it will cook down and become hard. If you start off too thick just add a little more oil. Keep stir it occasionally until it becomes dark brown.

Add your seasoning blend and saute the onions and such for 2 min.
Add two cups of water and one cup of chicken broth. Mix the rue in with all the juices.
Add two packs of brown gravy mix and all of the chicken. Add more water if needed.
Season with salt, pepper, garlic powder and creole seasoning. Put lid on and bring to a boil.

Cook on a boil with the lid on for 30 - 45 min. Stir occasionally until the meat is falling apart.
Once boiling the fire can turn down a little just to keep it at a boil.

Occasionally lift lid and scrap the bottom of the pot.
Don't let anything stick to the bottom and burn. I use a long grilling spatula to scrap and stir.

20 minutes before done put a pot of rice on. And I like potato rolls with my rice and gravy.

You can make beef tips and rice the same way with almost the same ingredients...
Use 2 packs of pork gravy mix instead of brown gravy mix...
Use 1 cup of beef broth instead of the chicken broth.
And of course use the finest strips of beef and you will have beef tips and rice! :glass:
I cut the beef up in small pieces before I throw them in.
